A quick look turns up these titles on astronomy, a favorite topic of
archaeologists:

NATIVE AMERICAN ASTRONOMY / edited by Anthony F. Aveni.
Austin : Univ. of Texas Press, 1977.

NEW DIRECTIONS IN AMERICAN ARCHAEOASTRONOMY / edited by Anthony F.
Aveni. Oxford, England : B.A.R., 1988

ARCHAEOASTRONOMY IN THE AMERICAS / edited by Ray A. Williamson.
Los Altos, CA : Ballena Press, 1981.

There are also recent works popping up on what the anthros are
calling "ethnobotany" (as opposed to "real" botany?), but I haven't seen
much on chemistry, physics, etc. There are also a few works on architecture,
I think.
