need nursing references

I am a student nurse doing my community health clinical
rotation at the Hupa Tribal Health Association in
northern California. I am in need of references/information
that I am unable to find in my standard nursing materials.
There are two questions I have.
The first has to do with finding a detailed nutrient
analysis of Tan Oak acorns. In my previous rotations I
have seen cancer patients who could tolerate/retain
ONLY acorn soup - a food staple of the people indigenous
to this area. The problem I have encountered is a
dietitian at the tribal Senior Center who will not
allow acorn soup to be prepared/served as part of the
hot lunch program because she believes acorns are not
healthy food (too fatty, and lacking in nutrients).
Does anybody know where I can find a recognized,
scientific nutrient analysis; so as to be able to
speak to this woman in the only language she will
listen to?
The second question has to do with Diabetes Mellitus,
commonly known as sugar diabetes. I am told that we
Native Americans can tolerate a greater range of
blood glucose values without ill effects than other
ethnic groups. Can anybody out there shed any light
on this assertion? It sounds suspiciously like
wishful thinking, but then again....
