I'm afraid I can't help with any technical references on analyses of
acorns but I did read a very interesting related article recently. In the
August 9th issue of NEWSWEEK, on p.64, there is an article that talks
about the importance of traditional foods in the healing of Indigenous
people. The main example used is Hawaiian but maybe some of the medical
people mentioned in the article could point you in the direction of the
facts you want.
