An excellent place to begin your search about native people of Vietnam (and
Southeast Asia in general) is LeBar, Hickey and Musgrave's "Ethnic Groups of
Insular Southeast Asia." Published by the Human Relations Area Files Press
in 1964. This will give you an overview of the people (look at the section
on upland Cham and th Muong in the Viet-Muong section). A classic
ethnography you should read is Georges Condominas', "We Have Eaten the
Forest: The Story of a Montagnard Village in the Central Highlands of
Vietnam," Hill and Wang PUb., 1977.
